So much time, let’s get cooking!

Remember when you used to scroll through Facebook and see those never-ending recipes? Like, when the hand comes into the frame in slow-motion, hovering around the spices and succulent pieces of marinated chicken all zoomed, you stared at it and moved on. Because you never really had the time to look at the entire recipe or even try making that at home. Any recipe that takes more than half an hour was a big NO. But now, since we’ve got all the time during the weekend, let’s try cooking those delicious recipes, shall we?

1. Mutton Chops
Nothing makes me happy like good food! Especially if it is so perfectly cooked with just the right amount of spices. Seriously, just look at it! Yeah, that’s what I’m talking about. Time to give this a try!

Ingredients you need are
Mutton chops 750 grams, oil 3-4 tablespoons, cloves 4-5, black peppercorns 7-8, green cardamoms 3-4, cinnamon 1 inch, onions sliced 3-4 medium, ginger-garlic paste 1½ tablespoons, green chillies slit 3-4, turmeric powder ½ teaspoon, red chilli powder 1 teaspoon, juice of 1 lemon, tomato puree ½ cup, garam masala powder 1½ teaspoons, salt to taste, fresh mint leaves chopped 2 tablespoons, yogurt ½ cup.

Heat oil in a non-stick pan. Add cloves, peppercorns, cardamoms, and cinnamon and sauté well. Add onions, mix and sauté till translucent. Add mutton chops and mix. Add ginger-garlic paste, mix and sauté well. Cover and cook for 4-5 minutes.
Add green chillies, mix, cover and cook for 10-15 minutes. Add turmeric powder, chilli powder, and lemon juice and mix well.
Add tomato puree, mix well and cook for 2-3 minutes. Add garam masala powder and salt and mix. Add mint leaves and yogurt, mix and cook till fully done.Garnish with coriander leaves and serve hot.
Preparation Time : 45-50 minutes

2.  Goan Chicken Vindaloo
The perfect vindaloo curry should be red-maroonish in colour, slightly sweet, have layers of heat from - red dry chillies, green chillies and black pepper and the most important have two distinct sour notes coming from the vinegar and the tamarind. Is your mouth watering too?


The Ingredients you need are
500 grams chicken, 2 onions, 1 tomato,1/4 cup homemade tomato puree,1 tablespoon sunflower oil, 2 green chillies,1 tablespoon tamarind (washed and soaked in hot water), salt to taste and coriander for garnish.

For the marinade:1 teaspoon sunflower oil, 8 cloves garlic,1/2 inch ginger,5 Kashmiri dry red chilli,1/2 tablespoon mustard seeds, 1/2 tablespoon black peppercorns,1 teaspoon cumin seeds,1 tablespoon coriander seeds,1/2 teaspoon methi seeds,3 cloves, 1-inch cinnamon stick, 4 tablespoon vinegar,1/2 teaspoon turmeric powder,1 teaspoon jaggery, 1/2 teaspoon salt.

Start by heating 1 teaspoon oil in a heavy-bottomed pan. Add the ginger, garlic, and all the dry masalas.Turn off the heat and let the masalas cool down. Then, transfer to a blender along with vinegar, salt, turmeric, and jaggery. Marinate the chicken with this paste for at least 2 hours or up to 24 hours.
To make the curry for the chicken vindaloo. Heat the 1 tablespoon oil in a heavy-bottomed pan.Add the green chillies and onions. 
Then, add the tomatoes and cook till they become soft and mushy. Once it is done, add the tomato puree and let it cook for about 2 to 3 minutes. 
Add the marinated chicken, mix everything well and let it cook for about 10 minutes.
Add 1 cup of water and cook the Chicken Vindaloo on medium flame, covered for 25-30 minutes till the chicken is falling off the bone and voila!
Preparation Time: 50 minutes

3. Slow-Cooked Lamb Curry (Mughlai Karahi Ghost)
Well, they say, good things take time. So, I took this quite seriously and decided to try out this really slow but delicious recipe. Are you ready to give this one a try?

Ingredients you need are: 1 kg leg of lamb on the bone cut to bite-size pieces, 5 garlic roughly chopped, 1½" ginger roughly chopped,4 tbsp vegetable oil,500gms tomato thinly sliced,200gms onions thinly sliced, 1½ tsp chilli powder (or mild paprika), salt to taste, 2 tbsp greek yogurt, 2 tsp coriander powder, pinch turmeric powder,1 tsp black cumin seeds coarsely crushed,½ tsp black pepper coarsely crushed,1/4 tsp garam masala powder, 2 green chillies slit,coriander leaves, mint leaves, and ginger for garnish

Add the lamb to a mixing bowl. Crush the garlic and ginger to a coarse paste and add to the lamb. Let it marinate overnight.
In a heavy bottom, large saucepan or kadhai heat the oil. Add the marinated lamb chunks and fry for 5-6 minutes stirring well to seal. Add the sliced tomatoes and cook for 8 minutes.
Add the onions and chilli powder and stir well and let it cook for 30 minutes.
Add the greek yogurt to a small bowl and mix in the ground spices; coriander, turmeric, cumin, and black pepper.
Add this to the karahi gosht and stir well making sure the yogurt does not split. Cook the lamb for 45-50minutes stirring halfway through cooking making sure it doesn’t stick to the bottom of the pan.
Turn the heat off and while it’s still warm add the garam masala, coriander, mint and ginger slivers.
Preparation Time: 50 mins

4. Chicken Biryani
Who doesn’t love biryani? For most, celebration means biryani! All the flavours and spices blending in together like they belong with each other in that pot. With some juicy marinated chicken which is like the best surprise with every serving.

Ingredients you need are
1 kg chicken, 1 tbsp salt,1 tbsp ginger garlic paste, 1 tbsp red chilli paste, green chilli paste, 1/2 tbsp cardamom powder, 3-4 Cinnamon sticks,1 tbsp cumin seeds, 4 cloves, mint leaves, 2 tbsp lemon juice, 250 gms curd, 4 tbsp butter,750 gms semi-cooked rice,1 tsp saffron, 1/2 cup water, 1/2 cup oil.

In a pan add meat, salt, ginger garlic paste, red chilli powder, green chilli paste, sauteed brown onions, cardamom powder, cinnamon, cumin seeds, cloves, mace, mint leaves, and lemon juice. Mix all of these ingredients thoroughly together.
Add curd, clarified butter, semi-cooked rice, saffron, water, and oil. Mix it well.
Now apply sticky dough on the sides of the pan. Cover with lid and cook for about 25 minutes.
Preparation Time: 1 hour
